What’s for Dinner?

Ah, the age-old question that plagues us daily: what to make for dinner? Today I’ve got the answer for you.

I’m a bit of a “foodie”–but who isn’t, right? Last week I unearthed my Grandma’s veggie pizza recipe, and oh.my.goodness is it delish (and easy)!

Vegetable Pizza

  • 1 ten oz pkg. pizza crust (like Pillsbury)
  • cooking spray
  • 1 tsp. dried thyme leaves
  • 1 tsp. olive oil (I use more like 2 T.)
  • small red potatoes, cut into small pieces (use as many as you want, I used about 5)
  • 1 small yellow squash, cut into 1/4 inch slices
  • 1 small red or green pepper, cut into 1 inch pieces
  • 1 small sweet onion, cut into small wedges
  • 4 cloves garlic, sliced thin
  • 1/4 tsp. salt
  • 2 T. balsamic vinegar
  • 2 C. provolone cheese

Place pizza crust on a greased pizza pan and bake in a 425* oven for 8-10 min.  Cool and set aside.  Combine potatoes, squash, peppers, onion, and garlic in a 13x9x2 inch pan.  Combine thyme, olive oil, salt, and vinegar and pour over vegetables.  Mix very well to coat all veggies.  Place in a 500* oven for 25-30 min, stirring at least once during that time.  Place 1 cup of the cheese on the cooled crust.  Add the veggies and then another cup of cheese on top.  Bake at 425* for 12 min or until done.

I sort of like to experiment with food now, and deviate from recipes.  I used Jarlsberg cheese (delish!), red and orange peppers, more olive oil and vinegar, and sea salt and pepper.  I also added cucumbers because they were in the fridge, and I used way more veggies than needed.  The extra veggies were nice as a side dish for other meals.

I share this with you because I think it’s an awesome recipe for getting your veggies in.  I struggled a bit during my pregnancy, as I was turned off by veggies for awhile.  I really only ate peppers, carrots, and sometimes celery.  Wish I had remembered this recipe then!  It’s a nice colorful dish and provides so many great nutrients for you, whether you’re a breast-feeding mom like me, a pregnant momma, or just someone who loves pizza with cheese and colorful, tasty toppings 🙂  It’s good for the whole fam!

These roasted veggies are great as a side dish!

Speaking of food, lil G-man is about to start on solids in 2 more weeks (I’m waiting til he turns 4 months, just to be safe).  I’m all stocked up on cereal, and hoping to make my own baby food as well.
